CARROTS STIR FRY

THE IMPORTANCE OF CARROTS

CARROTS: Contain Vitamins A, B, C, D, E, G and K which are good source of beta carotene and is a natural pigment that is used by the body and it has good amount of fiber. Raw carrots daily address the problem of constipation. Carrots also help maintain healthy cholesterol and prevent heart diseases. Being rich in potassium they help bring down cholesterol and water retention, here are some benefits we derive from carrots;

Carrots contain a variety of nutrients and antioxidants which includes Calcium, Copper, Iodine, Iron, Magnesium, Manganese, Phosphorous, Potassium, Sodium and Sulfur. Eating carrots regularly creates a protective shield for the body and an excellent remedy for ailments such as anemia, skin disorders, liver problems and ulcers.

 

CARROTS STIR FRY

Serve as a side dish with Rice/Roasted Potatoes.
Peel, wash and slice Carrots thinly into circles/ strips, one medium onion chopped, one tablespoon of red chilli powder and black mustard seed, 2 pc curry leaves,1/4 teaspoon turmeric powder and 1/4 crushed garlic, a pinch of salt to taste and coconut oil.

Heat coconut oil in a frying pan, add mustard seed and let it splutter, add onions and curry leaves and fry it for a few seconds, add sliced carrots and turmeric powder. Add salt, crushed garlic and red chili powder to taste, stir fry for about two (2) minutes.
